Ingredients:

1. Dried lentils (rinsed and drained)

2. Onion (diced)

3.Carrot (chopped)

4. Celery stalks (chopped)

5. Cloves garlic (minced)

6. Diced tomatoes

7. Vegetable or chicken broth

8. Cumin

9. Coriander

10. Paprika

11. Salt and pepper to taste

12. Olive oil for sautéing

Step 1: Sauté Aromatics

– In a large pot, heat olive oil over medium heat.

– Sauté diced onion, chopped carrots, celery, and minced garlic until softened.

Step 2: Add Lentils and Spices

– Add rinsed lentils to the pot and stir to combine.

– Sprinkle cumin, coriander, paprika, salt, and pepper. Stir well to coat the lentils and vegetables with the spices.

Step 3: Pour in Broth and Tomatoes

– Pour in the vegetable or chicken broth, and add the can of diced tomatoes with their juice.

– Bring the mixture to a boil, then reduce heat and let it simmer.

Step 4: Simmer Until Lentils Are Tender

– Allow the soup to simmer on low heat for about 25-30 minutes or until the lentils are tender.

– Stir occasionally and add more broth if needed.

Step 5: Adjust Seasoning

– Taste the soup and adjust the seasoning according to your preference. Add more salt, pepper, or spices if necessary.

Step 6: Serve Warm

– Once the lentils are fully cooked and the flavors have melded, ladle the soup into bowls.

– Serve warm, optionally garnished with fresh herbs or a squeeze of lemon for added freshness.
