Step 1: Prepare Ingredients

– Cooked rice (preferably day-old rice)

– Boneless, skinless chicken breast, cut into small pieces

– Vegetable oil

– Onion, diced

– Garlic, minced

– Vegetables (e.g., peas, carrots, corn)

– Soy sauce

– Oyster sauce (optional)

– Salt and pepper to taste

– Scallions, chopped (optional)

Step 2: Cook Chicken

– Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.

– Add chicken and cook until browned and cooked through, about 5-7 minutes.

– Remove chicken from the wok and set aside.

Step 3: Prepare Vegetables

– In the same wok, add the remaining 1 tablespoon of vegetable oil.

– Add diced onion and minced garlic and stir-fry until softened, about 2-3 minutes.

– Add mixed vegetables and cook until tender-crisp, about 2-3 minutes.

Step 4: Add Cooked Rice

– Add cooked rice to the wok, breaking up any clumps with a spatula.

– Stir-fry rice with vegetables for about 2-3 minutes.

Step 5: Add Seasonings and Chicken

– Add soy sauce, oyster sauce (if using), salt, and pepper to the rice mixture.

– Stir-fry everything together for about 1-2 minutes.

– Add cooked chicken back into the wok and stir-fry until everything is well combined.

Step 6: Serve

– Transfer Chinese fried rice and chicken to a serving platter.

– Garnish with chopped scallions (if using).

– Serve immediately and enjoy!
