Unlike the regular yam porridge, this version is loaded with vegetables — from ugu (fluted pumpkin leaves) to spinach, or sometimes scent leaf — giving the dish a fresh, earthy aroma and a vibrant green finish. Ingredients for Vegetable Yam

• Yam – peeled and cut into cubes

• Palm oil – (adjust to taste)

• Fresh ugu leaves (or spinach) – sliced

• Fresh pepper (scotch bonnet or chili) – to taste

• Onion – (sliced)

• Crayfish (blended) 

• Smoked fish or dry fish – optional but adds depth

• Seasoning cubes – to taste

• Salt – to taste

• Stock (meat or fish broth) – as needed

How to Cook Vegetable Yam

1. Prepare the base:

• Peel and cut your yam into medium chunks. Rinse and set aside.

• Wash and slice your vegetables; keep them aside for later.

2. Start the sauce:

• Heat palm oil in a pot. Add sliced onions and fry for about a minute.

• Add your blended or chopped peppers, stir and fry for 5–7 minutes until fragrant.

3. Add seasonings:

• Mix in crayfish, seasoning cubes, and salt. Stir thoroughly.

4. Cook the yam:

• Add the yam pieces into the sauce. Pour in enough stock or water to cover the yam slightly.

• Add your smoked or dry fish if desired. Cover and let it cook until the yam becomes soft (about 20 minutes).

5. Thicken and combine:

• Mash some of the yam pieces gently in the pot to give a semi-thick texture. Stir well to combine.

6. Add the vegetables:

• Once the yam is well-cooked and the sauce has thickened, add your ugu or spinach. Stir and allow it to simmer for 2–3 minutes, just enough to let the vegetables soften but retain their vibrant color.
