AgroKitchen: Delicious Chicken Curry Sauce

There’s something undeniably comforting about a well-prepared chicken curry sauce served over fluffy white rice. The harmonious blend of tender chicken, aromatic spices, and creamy sauce creates a meal that’s both satisfying and rich in flavor.

Ingredients:

• Boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

• Tablespoons vegetable oil

• Onion, finely chopped

• Garlic, minced

• Bell pepper (red or green), chopped

• Carrots, sliced

• Broccoli florets

• Chicken broth

• Soy sauce

• Oyster sauce

            •         Curry powder

            •         Thyme 

• Cornstarch, dissolved in water

• Salt and pepper, to taste

• Optional: chopped spring onions or parsley for garnish

Instructions:

1. Prepare the Chicken: Season the chicken pieces with a pinch of salt and pepper.

2. Sauté the Chicken: In a large pan over medium heat, add 1 tablespoon of vegetable oil. Once hot, add the chicken pieces and cook until lightly browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.

3. Sauté the Vegetables: In the same pan, add the remaining 1 tablespoon of oil. Sauté the chopped onion, curry powder, thyme and minced garlic until fragrant and translucent, about 2-3 minutes.

4. Add Remaining Vegetables: Add the bell pepper, carrots, and broccoli to the pan. Cook for another 5 minutes until the vegetables are tender-crisp.

5. Prepare the Sauce: Pour in the chicken broth, soy sauce, and oyster sauce. Stir well to combine. Bring the mixture to a simmer.

6. Thicken the Sauce: Stir the dissolved cornstarch to ensure it’s well-mixed, then slowly pour it into the pan, stirring continuously. Allow the sauce to simmer for 2-3 minutes until it thickens to your desired consistency.

7. Combine Chicken and Sauce: Return the cooked chicken to the pan, stirring to coat the chicken evenly with the sauce. Let it simmer for an additional 2 minutes to meld the flavors. Adjust seasoning with salt and pepper as needed.

8. Serve: Remove from heat and garnish with chopped spring onions or parsley if desired. Serve hot over a bed of steamed white rice.
