Chicken noodle soup is a comforting dish that’s perfect for warming up on a cold day or when you’re feeling under the weather. It’s also a simple and delicious meal that you can make from scratch at home. In this guide, I’ll walk you through how to prepare a homemade chicken noodle soup that’s both hearty and full of flavor.
Ingredients:
* boneless, skinless chicken breasts
* Chicken broth
* Carrots, peeled and chopped
* Celery stalks, chopped
* Onion, diced
* Cloves of garlic, minced
* Bay leaf
* Dried thyme
* Dried oregano
* Egg noodles
* Salt and pepper to taste
* Fresh parsley, chopped (for garnish)
Instructions:
Step 1: Prepare the Chicken
1. Begin by seasoning the chicken breasts with salt and pepper.
2. In a large pot, heat a bit of olive oil over medium-high heat.
3. Add the chicken breasts and cook for about 4-5 minutes on each side until they’re browned and cooked through.
4. Remove the chicken from the pot and set it aside to cool.
Step 2: Saute the Vegetables
5. In the same pot, add a bit more oil if needed, and then add the chopped onions, carrots, celery, and garlic.
6. Sauté the vegetables for about 5-7 minutes until they start to soften.
Step 3: Add the Broth and Seasonings
7. Pour in the chicken broth.
8. Add the bay leaf, dried thyme, and dried oregano to the pot.
9. Bring the broth to a boil.
10. Reduce the heat and let it simmer for about 20-25 minutes, allowing the flavors to meld.
Step 4: Shred the Chicken
11. While the broth is simmering, shred the cooled chicken breasts using two forks.
Step 5: Add Noodles and Chicken
12. Once the vegetables are tender and the broth is well-flavored, add the shredded chicken back into the pot.
13. Add the egg noodles and cook for the time specified on the noodle package, usually around 7-9 minutes.
Step 6: Season to Taste
14. Taste the soup and adjust the seasoning with more salt and pepper if needed.
Step 7: Serve and Garnish
15. Remove the bay leaf from the pot.
16. Ladle the hot chicken noodle soup into bowls.
17. Garnish with freshly chopped parsley.
