Bay leaf soup, known for its subtle yet distinct flavor, is a comforting dish enjoyed in various cuisines around the world. The bay leaves impart a unique aromatic essence to the soup, complementing other ingredients beautifully. This recipe combines simple ingredients to create a wholesome soup that’s perfect for any occasion. Here’s how you can make bay leaf soup at home:


-Vegetable or chicken broth

– Olive oil

– Onion, finely chopped

– Garlic, minced

– Carrots, diced

– Potatoes, peeled and diced

– Bay leaves

– Salt and pepper to taste

– Optional: chopped fresh parsley for garnish


Step 1: Prepare the Ingredients

– Gather all your ingredients and prepare them as directed. Chop the onion finely, mince the garlic cloves, dice the carrots and potatoes into small, uniform pieces.

Step 2: Sauté Onion and Garlic

– In a large pot or Dutch oven, heat the olive oil over medium heat.

– Add the chopped onion and sauté for 2-3 minutes until it becomes translucent.

– Add the minced garlic and continue to cook for another minute until fragrant, being careful not to brown the garlic.

Step 3: Add Carrots and Potatoes

– Add the diced carrots and potatoes to the pot.

– Stir and cook for about 5 minutes, allowing the vegetables to soften slightly.

Step 4: Add Broth and Bay Leaves

– Pour in the vegetable or chicken broth into the pot.

– Add the bay leaves, gently crushing them a bit between your fingers to release more flavor.

– Season with salt and pepper to taste.

Step 5: Simmer the Soup

– Bring the soup to a boil over medium-high heat.

– Once boiling, reduce the heat to low and let the soup simmer gently for about 20-25 minutes, or until the vegetables are tender and fully cooked.

– Remove the bay leaves before serving.
