Chinese fried rice with chicken is a flavorful and versatile dish that combines the savory goodness of fried rice with tender pieces of chicken. Ingredients:

– Cooked white rice (preferably chilled)

– Chicken breast or thigh, diced

– Vegetables (e.g., peas, carrots, corn)

– Eggs

– Green onions, chopped

– Garlic, minced

– Soy sauce

– Sesame oil

– Salt and pepper

– Cooking oil

Instructions:

1. Prepare Ingredients:

   – Cook the rice in advance and let it cool. Chilled rice works best for fried rice.

   – Dice the chicken into bite-sized pieces.

   – Chop vegetables and green onions. Minced garlic.

2. Preheat the Pan:

   – Heat a wok or a large skillet over medium-high heat.

   – Add cooking oil to coat the bottom of the pan.

3. Cook Chicken:

   – Season the diced chicken with salt and pepper.

   – Add the chicken to the hot pan and stir-fry until fully cooked and browned. Remove and set aside.

4. Scramble Eggs:

   – Push the chicken to one side of the pan.

   – Crack the eggs into the pan, scramble them, and cook until just set. Mix with the cooked chicken.

5. Stir-fry Vegetables:

9. Reincorporate Chicken and Eggs:

   – Return the cooked chicken and eggs to the pan. Mix everything thoroughly.

10. Add Green Onions:

    – Toss in chopped green onions for a fresh and aromatic touch. Reserve some for garnish.

11. Final Seasoning:

    – Taste and adjust the seasoning if needed. You can add more soy sauce or salt according to your taste.

12. Serve:

    – Garnish with additional chopped green onions.
