The rich aroma, colourful vegetables, and savoury taste of Chinese rice make it one of the most loved rice dishes around the world. Whether served alongside chicken, beef, seafood, or enjoyed on its own, Chinese rice is a simple yet satisfying meal that brings restaurant-style flavour right into your kitchen. Ingredients
Cooked rice (preferably cold rice)
Vegetable oil

Step 1: Prepare the Rice
Cook the rice and allow it to cool completely. For the best results, use rice that has been refrigerated for a few hours or overnight. Cold rice helps prevent the grains from becoming sticky during frying.
Step 2: Prepare the Vegetables
Wash and dice the carrots, bell peppers, and spring onions. Measure out the peas and sweet corn so everything is ready before cooking.
Step 3: Scramble the Eggs
Heat one tablespoon of oil in a large frying pan or wok. Beat the eggs and pour them into the pan. Stir gently until scrambled, then remove and set aside.
Step 4: Stir-Fry the Vegetables

Step 7: Season the Rice
Add soy sauce, sesame oil, salt, and black pepper. Stir continuously to ensure the seasoning is evenly distributed throughout the rice.
Step 8: Return the Eggs
Add the scrambled eggs back into the pan and mix well with the rice and vegetables.
Step 9: Garnish and Serve
Sprinkle the chopped spring onions over the rice and give everything a final stir. Serve hot with grilled chicken, fried chicken, beef, fish, or your favourite side dish.
